Les Magnòlies: Flavours of the Territory

Through forests of beech, oak and chestnut trees you reach the village of Arbúcies, at the bottom of a valley between Montseny and Les Guilleries, in the region of La Selva (Girona).

Here we find Les Magnòlies, a restaurant that cannot conceive of its cuisine without the surrounding territory. Always attentive to seasonality and fully aware of the privilege of being halfway between the sea and the mountains, the main products of their dishes always come from nearby and they make the most of them.

In 1996, Isidre and Roser opened Les Magnòlies, a restaurant that has become a benchmark in Catalonia, achieving a Michelin star in 2012. Today, with the incorporation of their daughter Neus and her husband Víctor Torres, they have managed to open up to new gastronomic challenges without renouncing the traditional recipes of Catalan cuisine.

In the kitchen Víctor seeks a balance between traditional recipes, learnt together with Roser, and new trends. They cook what they like to eat, they respect the textures and colours of the products, they are inspired by the environment and the gastronomic experiences they have had. They respect tradition, they stew, roast, do the ‘chup chup chup’ and they express it on the plate in a more sensorial and inspiring way.

The dining room also reflects the combination of Isidre’s experience and know-how and Neus’ fresh air. This passionately created project aims to offer a relaxed and unhurried gastronomic experience in a comfortable, welcoming and familiar space designed with the utmost care for materials and details by the interior designer Jordi Ginabreda.
